Cauliflower is mostly water, and it will not brown until that water has gone. The fix is simple and people rarely do it: cut the florets small, spread them out, and give them longer in a hotter oven than feels sensible. Twenty-five minutes at 220°C is where the good stuff happens.
At that point the florets have lost their raw cabbage edge and taken on something closer to roasted nuts. The dark tips are not burnt — they are the whole reason to cook cauliflower this way.
Grains are the neutral base that makes this a meal. Any of them work; the dressing is what unifies things, and it is made in the same bowl the grains cooled in, so nothing is wasted.

Heat the oven to 220°C fan. Toss the cauliflower with the olive oil, ground coriander, turmeric, salt and pepper until every floret is coated.
Spread over two trays if necessary so nothing is crowded, then roast for 25 to 30 minutes, turning twice, until the florets are dark at the tips and tender through.
Add the flaked almonds to the trays for the final 5 minutes so they toast alongside the cauliflower.
Meanwhile, warm the grains in a dry pan over medium heat for 3 minutes, until they smell toasty and any clumps have broken up.
Whisk the lemon zest and juice, garlic, extra virgin olive oil and a good pinch of salt in a large bowl. Add the warm grains and toss until glossy, then fold in the parsley and mint.
Tip the roasted cauliflower and almonds into the bowl and fold gently — you want the florets to stay whole where possible.
Divide between two shallow bowls and crumble over the feta or spoon over the labneh. Serve warm.

Crowding is the single most common reason roasted cauliflower comes out soft. Two trays in the same oven beats one crowded tray every time.
Turmeric is for colour as much as taste
It stains the florets gold and makes them look properly roasted. Use it sparingly — half a teaspoon goes a long way and more tastes medicinal.
Dress the grains while warm
They absorb the lemon and olive oil far better than cold ones, and the residual heat gently softens the garlic so it does not taste raw.

Can I roast the cauliflower ahead?
Yes, up to two days. Reheat it in a hot oven for five minutes to bring the edges back, rather than a microwave which will steam them soft.
Which grain works best?
Farro has the best chew and holds up to warm dressing. Pearl barley is softer, quinoa lighter. All three are fine — just avoid instant couscous, which turns to paste.
Is it filling enough on its own?
With the feta and almonds it is a proper lunch. For dinner, add a soft-boiled egg or a piece of grilled halloumi.
