Five minutes tonight, none tomorrow

Overnight oats have a reputation for being virtuous and dull, which is a fair criticism of most versions. The problem is usually texture: rolled oats soaked in milk alone turn to a stodgy paste that tastes of nothing in particular.

Three changes fix it. Grated apple brings pectin and acidity that keeps the mixture loose. Toasted cardamom adds warmth without any sugar. And a pinch of salt, which sounds strange in a sweet breakfast and makes the whole thing taste finished rather than flat.

The chia seeds are doing something specific — they gel and hold the liquid in suspension, which is what stops the oats from separating overnight. Without them you get a watery layer on top by morning.

Crack the cardamom pods and tip the seeds into a dry pan over medium heat. Toast for 60 to 90 seconds, until they smell warm and floral. Crush them to a coarse powder in a pestle and mortar.

Combine the oats, chia seeds, milk, yoghurt, grated apple, maple syrup, salt and crushed cardamom in a bowl or a large jar.

Stir thoroughly, making sure there are no dry pockets of chia at the bottom. Chia clumps if it is not dispersed properly at this stage.

Cover and refrigerate for at least 6 hours, ideally overnight.

In the morning, stir well. The mixture will be thicker than you left it, and it should flow slowly off a spoon.

If it is too stiff, loosen with a splash of milk. If it is too loose, stir in another teaspoon of chia and give it 15 minutes.

Divide between two bowls and top with berries, toasted seeds and a spoonful of yoghurt.

Three rounds of testing turned up three things worth knowing before you start cooking.

Rolled oats only

Instant oats turn to mush and steel-cut oats stay hard. Rolled oats are the only grade that gives you the right chew after an overnight soak.

Grate the apple rather than chopping it

Grated apple releases pectin throughout the mixture, which is what keeps it creamy. Chopped apple sits in chunks and does not thicken anything.

It keeps four days

Make a double batch on Sunday and eat it through Wednesday. Stir before serving and add the toppings fresh each morning.

Questions we get a lot

Can I warm it up?

Yes. Gently in a pan with a splash of milk, or thirty seconds in a microwave. It turns into something closer to porridge, which is pleasant on a cold morning.

Is it gluten-free?

Oats are naturally gluten-free but are usually processed alongside wheat. Use certified gluten-free oats if this matters to you.

Can I swap the cardamom?

Yes — cinnamon, ground ginger or a pinch of nutmeg all work. Cardamom is the one that makes it taste deliberate rather than generic, so it is worth trying first.
