Char the courgette hard; the contrast of soft middle and striped edge is the point.

We tested bulgur and couscous. Bulgur has more bite and keeps the bowl from feeling like a side.

Cook the bulgur per the packet; fluff with a fork and a little oil.

Grill the halloumi and veg in a hot pan until striped and soft, about 3 minutes a side.

Mix the yoghurt with mint, lemon and salt.

Build bowls of bulgur, veg and halloumi; drizzle the yoghurt over.

No grill pan

A normal frying pan on high heat chars just as well.

Add crunch

Toasted pumpkin seeds on top lift the texture.
