A good shop-bought paste is the shortcut; fry it in the coconut cream solids first to wake the aromatics.

Cut the veg by cooking time — hard first, leafy last — so nothing is raw or grey.

We tested fish sauce versus soy for the salt. Fish sauce is traditional and deeper; soy keeps it vegan.

Spoon the thick top off the coconut milk and fry the paste in it 1 minute.

Add the rest of the milk and water; bring to a simmer.

Add the aubergine and pepper; cook 8 minutes, then the beans 4 minutes.

Season with fish sauce and sugar; stir in basil and lime.
