Why the bread matters as much as the avocado

Thin supermarket bread turns soggy under avocado. A thick-cut sourdough, toasted until deeply golden, holds its crunch and gives the toast structure.

The toppings need contrast: creamy avocado, salty feta, sharp lemon and a pinch of chilli. Without the chilli, the whole thing tastes flat.

Toast the sourdough until the edges are dark and crisp.

Halve the avocado, remove the stone and scoop the flesh into a bowl. Mash roughly with the lemon juice, salt and pepper.

Spread the avocado generously over the hot toast.

Top with the feta, chilli, herbs and a drizzle of olive oil. Finish with flaky salt and black pepper.

Avocado ripeness

It should yield gently when pressed. Too firm and it will not mash; too soft and it tastes oxidised.

Herb choice

Dill is classic with feta and lemon. Coriander works if you want a brighter, greener flavour.

A poached egg or a few smoked salmon ribbons turns this into a more substantial meal.

Can I make this ahead?

Toast the bread and prep the toppings, but assemble just before eating so the bread stays crisp.

What if my avocado is underripe?

Slice it thinly instead of mashing. It will still taste good even if less creamy.

Is this vegan?

Without the feta, yes. Add a pinch of nutritional yeast for a savoury note.
