The make-ahead brunch centrepiece

Blind-bake the shell or the base goes soggy under the custard — a tray of beans for 12 minutes does it.

Brown the mushrooms hard so they give up water and concentrate; steamed mushrooms weep into the filling.

We tested gruyere and cheddar. Gruyere melts cleaner and tastes of the Alps; cheddar is the budget backup.

Heat the oven to 180°C / 350°F. Brown the mushrooms in butter; season and cool.

Whisk the eggs, cream, half the cheese and thyme; season.

Scatter the mushrooms in the case, pour the custard, top with the rest of the cheese.

Bake 35-40 minutes until just set with a slight wobble; cool before slicing.

No blind bake?

The base will be soft; worth the 12 minutes for a clean slice.

Comte or emmental sit close to gruyere.
