The skillet does the work

Cornbread slides into blandness when it is baked in a cake tin like a sponge. In a cast-iron skillet that has been heated until the butter is actively browning, the batter hits the metal and sets immediately, giving you a thin, crisp, deeply savoury base. That crust is the entire point of the dish.

The second variable is the cornmeal itself. Stoneground medium cornmeal gives you a coarse, sand-textured crumb that is unmistakably cornbread. Fine cornflour makes something closer to a cake. They are not interchangeable.

And it should not be very sweet. A tablespoon of honey is enough to round the edges of the corn flavour; more than that and you are baking dessert, which is a different recipe for a different day.

Put a 25 cm cast-iron skillet on the middle shelf of the oven and heat to 220°C fan. The skillet needs a full 15 minutes at temperature, not just a warm oven.

Whisk the cornmeal, flour, baking powder, bicarbonate of soda and salt together in a large bowl until evenly combined.

In a second bowl, whisk the buttermilk, eggs, honey and the 100 g of melted butter until smooth.

Pour the wet ingredients into the dry and fold with a spatula until just combined — about ten strokes. A few streaks of flour are fine. Over-mixing makes cornbread tough.

Fold in the sweetcorn. If your kernels are at all wet, pat them dry first; excess water steams the crumb.

Carefully pull out the hot skillet, drop in the extra tablespoon of butter and swirl it until it foams and just starts to smell nutty.

Pour in the batter immediately — it should hiss and set at the edges on contact. Spread it level and return the skillet to the oven.

Bake for 22 to 26 minutes, until the top is golden, the edges have pulled slightly from the pan and a skewer comes out clean.

Cool in the skillet for 10 minutes, then slice into wedges and serve warm with butter, or alongside chilli or beans.

Testing notes & substitutions

Three rounds of testing turned up three things worth knowing before you start cooking.

No buttermilk? Make your own

Stir a tablespoon of lemon juice into 350 ml of whole milk and leave it for 10 minutes. It will thicken and curdle slightly, which is exactly what you want for the rise.

Cast iron is worth it

A heavy oven-safe stainless pan works in a pinch, but nothing replicates the way cast iron holds heat and delivers it to the base. This is the one piece of equipment that genuinely changes the result.

Do not skip the sweetcorn

It brings sweetness and moisture that the crumb needs. If you only have frozen corn, spread it on a tray and roast it at 200°C for 10 minutes to drive off the water.

Questions we get a lot

Why is my cornbread dry?

Usually too much mixing, or too long in the oven. Pull it the moment a skewer comes out clean, and check two minutes before the timer.

Can I make it in a muffin tin?

Yes. Heat the tin with a little butter in each hole, then bake for 16 to 18 minutes. The crust proportion goes up considerably, which is a good thing.

Is this sweet cornbread?

Barely. It is a savoury southern-style cornbread with a single tablespoon of honey. Serve it with butter rather than syrup.
