The weeknight pasta that never lets you down

The trick here is browning the sausage hard before anything else touches the pan, so you build a lacquer of flavour on the bottom that the cream later lifts off.

Use whichever peppers are cheapest and brightest — a mix of red and yellow reads like more effort than it is. The vinegar at the end is not optional; it keeps the cream from turning heavy.

We tested this with both Italian sweet and spicy sausage. The spicy version needs nothing extra; the sweet one wants a pinch of chilli flakes tossed in with the garlic.

Boil the rigatoni in well-salted water until just shy of al dente; reserve a mug of the pasta water before draining.

Brown the sausage in a wide pan over medium-high heat, breaking it up, until it has dark edges — about 8 minutes. Push it to one side.

Add the onion and peppers to the cleared side, soften for 6 minutes, then stir in the garlic and chilli for 1 minute.

Tip in the cream and a splash of pasta water; scrape the bottom to loosen every brown bit.

Add the drained pasta and toss over the heat until the sauce clings, adding more pasta water as needed.

Off the heat, stir through the parmesan and vinegar, then taste for salt and pepper.

Can I make it ahead?

The sauce reheats well; cook the pasta a minute under and finish it in the sauce so it does not go mushy.

No cream?

A knob of butter and a little more pasta water gives a lighter but still silky version.

Questions we get a lot

Can I use pre-cooked sausage?

You can, but you lose the fond that makes the sauce. Brown it briefly just to colour, then proceed.

How do I keep it from splitting?

Keep the heat low once the cream goes in and add pasta water gradually — a sudden boil is what breaks dairy sauces.
