A pull-apart loaf skips the bagel boil but keeps the chew by using a sturdy enriched dough and a hot oven.

Roll the seasoning into the top after an egg wash so it sticks through the bake.

We tested sprinkling versus pressing in. Pressing a little into the cuts keeps it from burning.

Mix the flour, salt, sugar, yeast and water; knead 8 minutes, then rise 1 hour.

Heat the oven to 200°C / 400°F. Shape into a rough loaf or knots on a tray.

Brush with egg, scatter the seasoning, and press it in lightly.

Bake 30-35 minutes until hollow-sounding and golden.
